My Favourite Potato Salad - Creative Monday Linky


     I am a big fan of potato salad and have tried making it with a variety of ingredients.  My favourite is definitely potato salad with mixed vegetables.

Recipe 
6 Potatoes
1 onion
1 tin of mixed vegetables

Method
Wash, peel and dice the potatoes.
Add a teaspoon of salt in 6 cups of water and bring to a boil.
Put in potatoes and boil for 20 minutes.
Drain immediately and place potatoes in a container.
Add the onion, mixed vegetables, black pepper and mayonnaise, then toss.
Place in the freezer for 1 hour.

Question Time

     Every weekend I will have a blog post where I ask and answer questions.  It is a good way for readers to get to know more about me and also help me to get feedback on a number of questions. Do you have pets?  I have always had pets and over the years they have been dogs. At this time we have 6 dogs! Yes, 6 dogs!
  As usual I am participating in Friendship Friday hosted by Create With Joy where this week the theme is This Land Is Your Land. 1.  Which country are you from?  I am from the Caribbean island of Jamaica and have lived here all my life. 2. How much of the country have you visited?  I have visited most of the parishes. 3. Which part of the country you would like to visit next?  I would like to visit Negril. It is on the other side of the island from where I live and has several miles of lovely white sand beaches.

Bird Figurine Series - # 35

  In high school Janine and I did sewing classes but we did not keep up with our sewing. This is one of the early bird figurines that joined our collection, a cute little blue bird figurine featuring a pin cushion.

Oxtail In A Pressure Cooker - Creative Monday Blog Hop

        Before I share my recipe today I want to say Heartiest Congratulations to my blogger friend and the co-host of this hop, Clairejustine, for running the London marathon. Go Claire!  Go Claire!  I wonder if I should now take up running!:)  I am from Jamaica and we have so many good athletes.
        Now on to my  recipe. Every now and then I like to enjoy a meal that includes oxtail.  One of my favourite meals is oxtail with rice and peas, crushed Irish Potatoes, vegetable salad and fried ripe plantains. This is how it is prepared at my home.


Ingredients
4 lbs of oxtail
1 onion
stalk of escallion
2 cloves of garlic
1 dessertspoon of salt
2 tablespoons of butter
2 tablespoons of tomato ketcup
some grains of pimento
black pepper

Method
1. Season oxtail with onion, escallion, salt and blackpepper.
2. Place oxtail in a pressure cooker.
3. Add water to cover oxtail fully.
4. Add pimento, butter and tomato ketchup
5. Cook for 1 hour.
6.  Add more water and cook for another hour or until tender

Question Time

     Every weekend I will have a blog post where I ask and answer questions.  It is a good way for readers to get to know more about me and also help me to get feedback on a number of questions. Do you collect anything?  If not, what would you collect given the opportunity?  During our high school days my twin sister and I collected postcards and stamps.  Over 20 years ago we started collecting bird figurines which grew into a huge collection.  I do not see myself starting another collection but if I did it would be clocks. I love clocks!
    As usual I am participating in Friendship Friday hosted by Create With Joy where this week the theme is Catharsis. Nature has a way of lifting my spirit so today I share my poem titled Finding Peace Amidst Nature which was one of the early posts when I started this Blog.

Rice And Macaroni - Creative Monday Blog Hop

    Every now and then I try a new rice recipe.  This one included something that I like very much, macaroni.

 Ingredients
 Cooking Oil
 Pack of macaroni
 1 onion
 3 cloves of garlic
 2 lbs of rice
 4 cups of chicken broth
 Teaspoon of salt

Method
1. Heat oil and add macaroni.  Cook for  5 minutes or until macaroni is brown.
2.Stir in onion and garlic and cook for 3 minutes.
3.Stir in Rice.
4.Add chicken broth and a teaspoon of salt.
5.Cook for about 30 minutes.

Question Time

Do you have a hobby that you started as a child?  In our early high school years Janine and I started corresponding with pen-pals.  Today I still have several pen-pals but I mainly exchange emails now. I also keep in touch with some of Janine's former pals.
     As usual I am participating in Friendship Friday hosted by Create With Joy where this week the theme is Gardens. Do you have a black or green thumb when it comes to growing things? Do you currently have-or plan to start- a garden?  Are there any public gardens in your area that you would like to visit?  I would say that I have a green thumb. We have 3 gardens at our home.  There are no public gardens in my area.  I love flowers and would like to visit some public gardens in my country like Castleton Gardens and Hope Gardens. I visited Hope Gardens many years ago.

Bird Figurines Series - # 33

     Do you have an item for a particular purpose but you refuse to use it in that way?  Well, there are several items in my bird figurine collection that fall in this category.  One of them is this swan which is really a candlestick.  Janine and I were thrilled when we received it as a gift many years ago. The pink reflection you see in the body is in fact a candle.  I am sure it would look beautiful lit but I don't plan on lighting it any time soon.

Journeys Of The Zoo

Potato Salad With Cherries - Creative Monday Blog Hop


   My family and I love potato salad and I am always eager to experiment with different ingredients. Recently I decided to add cherries to the potato salad and was happy that it tasted quite good.

RECIPE
6 Potatoes
1 onion
2 dozen cherries
black pepper
1 tsp of salt
mayonnaise

METHOD

Question Time

Do you like sending text messages? If so, are you good at SMS language or text language?  I am a phone call person and rarely send text messages. The funny thing is that I tend to write out every word when I do send a text. That means that I will write out 'you' instead of 'u.'
     I am also participating in Friendship Friday hosted by Create With Joy where this week the theme is Something New. When is the last time you did something new? Over the Easter weekend I came up with a new idea for potato salad which I will share on my next Creative Monday Blog Post. Is there something new you would like to do this season?  I would like to try some new recipes and start using a laptop instead of a desktop. I will get my first laptop this weekend!

Easter Goodies - Creative Monday Linky

     My family and I have been enjoying the long 4 day Easter holiday weekend. It is good to see several of the favourite decorations that my twin and I always used to decorate our living-room.
   There are also the many Easter goodies that my family and I have been enjoying.  Happily everything turned out delicious:
Escoveitched Fish
        We eat a lot of escoveitched fish at Easter and like it especially with bread.  In a previous post I shared the recipe. It can can be found HERE.


Easter Buns
     Easter buns are oblong shaped buns sold by bakeries across the island. This year we enjoyed the 2 above which were made by Maxfield and Whitfield Bakeries.


Chocolates
     I still have most of the chocolate above.  I have been very good so I share them with my family whenever I have some.
    Our Easter Sunday and Easter Monday lunch - roast chicken with stuffing, curried mutton, rice and peas, potato salad, vegetable salad and baked ripe plantains and rolls.
