Easy Seasoned Rice - Creative Monday Linky
Recipe
2lbs of rice
5 cups of water
1 pk of Grace Cock Soup Mix ( Spicy)
Hot Pepper Sauce
Tomato Ketchup
1.Put water in pot and add a pack of cock soup mix.
2.Add some drops of hot pepper sauce and 4 tablespoons of Tomato Ketchup
3.Add rice and stir with a fork
4. Allow to cook for about 1 hour

Bird Collection Rearranged - Creative Monday Blog Hop
Over the years Janine and I always took time out to rearrange our bird figurine collection at least once a year. In recent times I have had to do this alone. Above is the empty display unit. I managed to get the glass and wood as shine as possible.
Here the figurines are all back and I did not break any of them! Two weeks ago I started a Bird Figurine Series which is the last post every week.

The Pepper Flavour - Creative Monday Blog Hop
I like pepper in my food but not very hot. Whether it is a meat dish, rice and peas, gravy etc. pepper must be there. While my favourite is the Scotch Bonnet pepper I usually need to be careful as my mother does not like pepper.
Guess what?! I have found a solution with Hilo Hot Pepper Sauce! These days I use it in many dishes and even when I use several drops my mother does not find the food too hot!:) What is also wonderful is the fact that it gives the food such a great flavour.

Yellow Yam - Creative Monday Blog Hop
What a relief! Tropical Storm Ernesto is no longer a serious threat to Jamaica and I have reason to cheer about my country's performance at the London Olympics. Our top sprinter, Usain Bolt, is from the parish of Trelawny where a
variety of yams abound! Well, I like yellow yam a lot and enjoy it
whether in soup or cooked on its own. Every week I eat some. First I peel off
the skin and slice it up. After that I
put a teaspoon of salt in about a quart of water. When it boils up I put in the
yam and allow it to cook for about 1 hour. Below is a picture of boiled yellow yam.

A Time To Celebrate!

This weekend will be a special long holiday weekend as Jamaica celebrates its 50th anniversary of Independence on Monday, August 6th. Over the years Janine and I eagerly looked forward to this time of the year. Our favourite events leading up to the big day included the Festival Song or Popular Song competition, Festival Queen Contest, Mello- Go- Roun’, Gospel Song competition, Grand Gala etc. If it meant staying up late at night to see or hear who was the winner of a competition we would do so. Whenever there was a special fashion for festival we would also get dresses made up in the fashion. This year the Jamaican colours can be seen in many places.
Well, what better time to list my Top 10 favourite things about my homeland:
