Gingered Chicken - Creative Monday Linky

     I think that ginger adds to the flavour of a number of recipes so recently I tried this one. It turned out to be delicious.
Recipe

1 Chicken
1 Onion chopped
Stalk of Escallion
4 pegs of garlic
2 dessertspoons of grated ginger
3 Tablespoons of Tomato Ketchup
1 Teaspoon of Sugar
1 Scotch Bonnet Pepper or Hot Pepper Sauce ( Optional)
Black Pepper
Salt to taste
Cooking Oil

Directions
1.Cut up chicken in small pieces and wash with lime and water
2.Season with ginger, onion, escallion, garlic, black pepper, tomato ketchup, sugar and pepper.
3.Allow to marinate for a few hours.
4.Cover pot bottom with oil and place chicken in when oil is hot
5.Cook for about an hour and a half. Every 20 minutes stir pot. Add a little water and cover it for the final 20 minutes.

Question Time


      Every weekend I will have a blog post where I ask and answer questions.  It is a good way for readers to get to know more about me and also help me get feedback on a number of questions. Do you prefer to have a book in your hand or have you already adjusted to reading eBooks? I still prefer to have a book in my hand. Yes, smelling that book and turning those pages!:) Nevertheless I am facing reality that there are a lot of good eBooks out there so I had better enjoy some of them. That is just what I did recently. Two of them were ‘21 Days Of Gratitude Challenge’ by Shelley Hitz and ‘13 Ways to Get the Writing Done Faster’ by Linda Formichelli and Carol Tice.
      I have some more downloaded on my Kindle for PC that I hope to read soon. I love eating chicken and cooking it in different ways so I am already looking through the book ‘303 Chicken Recipes’ by Luke Wren. In the meantime I can’t wait to read ‘People Can’t Drive You Crazy If You Don’t Give Them The Keys’ by Mike Bechtle. I love that title!

Potato Salad With Raisins

   My family and I love potato salad and are always willing to try new recipes. This past Christmas we tried this one.

Ingredients
6 Irish Potatoes cubed
1 big onion, chopped
Salt to taste
Black pepper
1/2 cup of raisins
1/2 cup mayonnaisse


Directions
1.Add a teaspoon of salt in 6 cups of water and bring to a boil.
2.Boil potatoes for about 20 minutes.
3.Drain the water off.
4.Add the onion, black pepper, raisins and mayonnaise, then toss.
5.Spoon into a bowl and place in the refrigerator for about 2 hours.

Question Time

    
      A New Year is here and I have decided to have a blog post every weekend where I ask and answer questions. I think it is a good way for readers to get to know more about me and also for me to get feedback on a number of questions. Here is question No.1 Do you always make New Year's Resolutions?
      Over the years I have made some New Year's Resolutions. In recent years they have usually been about ways to cope with the loss that I have faced, ways to increase my spirituality and faith, plans for my writing career and efforts to ensure good health. I do not always achieve some of them but while I do not think this is the end of the world I think it is worth the effort.
