ROAST CHICKEN WITH STUFFING - CREATIVE MONDAY LINKY

ROAST CHICKEN WITH STUFFING



     Roast chicken has always been a big favourite for me and my family.  A variety of  ingredients  can be used in preparing it but this is how we do it at our home.

Ingredients

1 whole chicken
1 onion
Stalk of escallion
Scotch Bonnet pepper 
Garlic
Sprig of thyme
Salt to taste
Paprika
Cooking Oil
Chicken liver
Bread crumbs
Blackpepper

Method
Wash chicken with water and lime or lemon, then pat dry. Season chicken with salt, onion, escallion, garlic, thyme and pepper.  Place some oil in a frying pan, cut up chicken liver and cook it with seasoning and bread crumbs. You can spinkle a little salt and black pepper in the stuffing.  After that stuff chicken then sprinkle Paprika and oil over it. Place in an oven for about 1 ½ hours.
