Easter Lilies Still Blooming!

     Janine and I have always loved Easter lilies. We are well past Easter but I looked over a wall and saw these lilies still blooming. I had to take some photos!

Potato Salad With Green Peas - Creative Monday Linky

Hello and welcome to Creative Mondays hosted by Clairejustineoxox and Judy H-J's Thoughts where you can link up all your creative posts for the week.

RECIPE
6 Potatoes

1 onion

2 tablespoons of margarine

1 tin of green peas

black pepper

1/4 cup of carrot (optional)

1 tsp of salt

mayonnaise

Method

Wash, peel and dice the potatoes.

Add a teaspoon of salt in 6 cups of water and bring to a boil.

Put in potatoes and boil for 20 minutes. 
Drain immediately and place potatoes in a container.
Add the butter, onions, carrot, green peas, black pepper and mayonnaise, then toss.

Place in the refrigerator for an hour.

Question Time! I'm Tagged!

    It is time to answer some questions.  They are from Susan whose Blog is The Secret To Having It All


1.How long have you been blogging?

  For just over 1 year. I celebrated my Bloggerversary last month.

2. Are you a procrastinator or do you take care of things right away?

  I rarely procrastinate and get real busy about what needs to be done.

3. If you have siblings, are you close?

   I am from a close knit family with my twin sister and I being very close up to the time of her death.      Now I only have 1 brother as my brother Sutcliffe died last December.

4. What's the best thing about your job? the worst?
   I am a Freelance Journalist and I find that writing is good therapy especially at this time.  However it  can be a bit stressful at times.

5. If you had $1,000 to spend on anything you wanted, what would you buy? 
    In my currency, I would most likely buy more inspirational books.

6. How long has it been since you visited your hometown?

  I have lived in my hometown all my life.

7. Have you decorated for Easter/Spring? please share pictures.

8. Do you sleep with a fan on?

    No, not even when it is hot.

9. The beach or the mountains?

    I like looking at both, not being on them.


10. If you had to choose only one which would you pick: Facebook, Twitter, Pinterest, or blogging?

     I like Blogging best but I think all of them are important.

11. When shopping, do you use coupons or shop around for the best deal?
      At times I shop around for the best deals.

Picture Found At Last!

     Over 3 years ago when we were preparing a special album after Janine's death we wondered how we did not come across any pictures of Janine and me in our Marymount High School uniforms.  Lo and behold a few days ago we found this one in an envelope. It was taken a long time ago and of course not by a digital camera but I am still glad to have it!:)

ESCOVEITCHED FISH - CREATIVE MONDAY LINKY

    Hello and welcome to Creative Mondays hosted by Clairejustineoxox and Judy H-J's Thoughts where you can link up your posts every week.

 Escoveitched fish has always been a big favourite for my family and especially at Easter.  


RECIPE
2lb (1kg) fresh fish
juice of 2 limes

1/2 tsp salt

black pepper

cooking oil

Pickle

1-2 cho chos chopped in strips

3 carrots chopped in strips

2 onions sliced

1 or 2 hot peppers

2 tablespoons pimento seeds

1 cup vinegar

1 tsp sugar

Wash the fish thoroughly with water and lemon or lime juice, then dry with a kitchen cloth or towel.  Sprinkle them well with salt and black pepper.  Heat plenty of oil in a frying pan and place the fish in the hot oil. Fry them on both sides until they are brown.  Drain them and arrange them in a container.

To prepare the pickle combine the vinegar, sliced onions, pepper, pimento seeds,sugar, oil, water, chocho and carrot strips and bring to a boil in a pot.  When the ingredients are tender remove from the fire and let it cool.  Pour over the fish.

A BOOK FOR TOUGH TIMES

        As I was going through my regular browsing of a wide variety of blogs I came across a give-away that I just could not resist on About A Mom.  It was Chicken Soup For The Soul's  Devotional Stories for Tough Times.  I saw it at a time when I needed it so badly, shortly after the death of my brother Sutcliffe. Well, I went ahead and entered and you can just imagine how thrilled I was when I got an email stating that I was among the winners.

         I waited patiently and as it arrived I started reading. There are 101 Daily Devotions from different authors to inspire and support anyone facing challenges – grief, family issues, illness, financial difficulties,  you name it. I like the fact that each story begins with a Bible verse and ends with a prayer.

         I was especially impressed that the stories were not long and got the messages across very effectively. Many times when I felt low in spirit I read a story and immediately felt better. Even stories that did not relate to a challenge I faced had a powerful message as it encouraged me to trust in God and prayer even when I felt as if I was at the end of a rope.

         I highly recommend this book to anyone who is going through a very difficult period in his/her life. As a matter of fact it would be good to have this book even if all is well. It will come in handy if one day you find your back against the wall.

         I am rereading it, choosing now to read one story a day until the book is finished yet again. 

JAMAICAN EASTER BUNS

     Here in Jamaica it is the custom for us to eat bun and cheese at Easter. Many bakeries bake them. This year we bought two of our favourites - HTB & National Easter Buns.
