Corned Beef To The Rescue- Creative Monday Linky


   I am so happy that come Friday of this week, November 30, the hurricane season will come to an end. From time to time I eat corned beef. Tins of this product are essential during the hurricane season, especially when you are left without electricity for several days. Today I share one of my 'After Hurricane Sandy' meals. While some persons cook the corned beef I prefer to eat it straight out of the tin only adding onion. The lunch consisted of corned beef, boiled macaroni, boiled yellow yam, cabbage and carrot salad and fried ripe plantains.

My husband is a huge corned beef fan. Actually, he just had it Saturday. On the other hand, I just can't get into it. I do think the rest of your plate looks really yummy though :)

What an awesome looking plate of food! :) I am starving right now and excited to eat a late dinner in a bit. Wish we had some of those plantains at our place :) they look amazing!! We have a restaurant called Bahama Breeze that serves them but they are not nearly as good as the ones in Jamaica!!
