Garden Delight - Creative Monday Blog Hop

  Early last year when my family and I were out on a Sunday evening drive we came across these flowers and decided that we would like to have them in our garden.  We stopped and asked if we could get some plants and the persons whom we knew very well gave us some.

     These plants were huge with many flowers so I thought it would be quite some time before I would see any flowers from the ones we planted. Lo and behold the small plant has already given us some flowers.

Creating Floral Collages - Creative Monday Linky

Easter Goodies - Creative Monday Linky

     My family and I have been enjoying the long 4 day Easter holiday weekend. It is good to see several of the favourite decorations that my twin and I always used to decorate our living-room.

   There are also the many Easter goodies that my family and I have been enjoying.  Happily everything turned out delicious:

Escoveitched Fish

        We eat a lot of escoveitched fish at Easter and like it especially with bread.  In a previous post I shared the recipe. It can can be found HERE.

Easter Buns

     Easter buns are oblong shaped buns sold by bakeries across the island. This year we enjoyed the 2 above which were made by Maxfield and Whitfield Bakeries.

Chocolates

     I still have most of the chocolate above.  I have been very good so I share them with my family whenever I have some.

    Our Easter Sunday and Easter Monday lunch - roast chicken with stuffing, curried mutton, rice and peas, potato salad, vegetable salad and baked ripe plantains and rolls.

Favourite Easter Decorations - Creative Monday Linky

     Here in Jamaica it is not the custom to decorate one's home at Easter. Anyway my twin and I started decorating our home after receiving Easter decorations from pen pals in a number of countries. I plan to decorate again this year and started to worry when I could not find my Easter decorations. During Hurricane Sandy I had to move things around  so that they would not get damaged. I was so relieved when  I finally found them! Here are some favourites that Janine and I like to decorate with.

Cocos In My Soup - Creative Monday Blog Hop

    What do you cook in your soup?  Cocos is a  must whenever I cook soup. Originally from the  Pacific region coco is a starchy tuber that can be found in tropical countries. After being reaped they are peeled and then put in soup to be cooked for about 1 hour. They help to thicken the soup.

A Second Blog Anniversary - Creative Monday Linky

    
     Time really flies. I can't believe that March 4 marks the second anniversary of my Blog. I am enjoying every moment as a blogger. I will always remember a quotation by Lord Byron that I once had at the top of my blog "To have joy one must share it. Happiness was born a twin."  As I celebrate this milestone I decided to have some fun with a few of the cards that my mother received when Janine and I were born and celebrated our 1st birthday.  Mom has always had scrapbooks with cards she received on special occasions.  It is a trait that Janine and I inherited.

    I am truly grateful to all the persons who have supported me by Following my blog, reading and sharing comments.  So look out!
                                               
             

Fried Chicken with Paprika

   Over the years fried chicken was always a favourite dish of my twin and me. I still love it and fried some recently using Paprika. I love the flavour of Paprika. This is how I prepared it.

Ingredients

Pack of mixed parts chicken

1 Onion

Stalk of Escallion

4 pegs of garlic

1 pepper

Paprika

Flour

Cooking Oil

Method

1. Remove skin from chicken and wash with lime and water

2. Season chicken with onion, escallion, garlic and pepper

3. Mix some paprika and flour

4. Coat each piece of chicken with the paprika and flour

5. Hot the oil in a frying pan and add chicken

6. Brown chicken on both sides

The Climb Out Of The Valley - Creative Monday Linky

     My decision to start this blog was always with an intention to share ways to heal after loss. Anyone who has lost someone knows how difficult it is to cope and I am glad that in various ways I have been able to share how I have faced this challenge. Gizzadas - Creative Monday Linky

    I am from a tropical island and many coconut trees can be found here.  I love the flavour of  coconut and from time to time buy food items that contain it. A few days ago I ate some Gizzadas, a Jamaican coconut snack. From Tea Towel To Curtain - Creative Monday Linky

     Over the years my twin and I received many tea towels as gifts from pen-pals.  They never ended up in a tray.  In several instances we turned them into small curtains.  Below is one of our favourites. Many will not be surprised that it has on 10 birds. I have decided to decorate my room with it this year.

Seasoned Rice with Sausages - Creative Monday Linky

Ingredients

1 tin of Vienna sausages

2 lbs of rice

Tomato Ketchup

1 Onion

Stalk of Escallion

Black Pepper or Hot Pepper Sauce

Method

1. Wash rice

2. Cut up Vienna sausages in small pieces

3. Put 5 cups of water in a pot

4. Add onion, escallion, hot pepper sauce and 4 tablespoons of Tomato Ketchup.

5. Put rice in pot.

6.Add sausages and stir

6. Cook for 1 hour

Gingered Chicken - Creative Monday Linky

     I think that ginger adds to the flavour of a number of recipes so recently I tried this one. It turned out to be delicious.

Recipe

1 Chicken

1 Onion chopped

Stalk of Escallion

4 pegs of garlic

2 dessertspoons of grated ginger

3 Tablespoons of Tomato Ketchup

1 Teaspoon of Sugar

1 Scotch Bonnet Pepper or Hot Pepper Sauce ( Optional)

Black Pepper

Salt to taste

Cooking Oil

Directions

1.Cut up chicken in small pieces and wash with lime and water

2.Season with ginger, onion, escallion, garlic, black pepper, tomato ketchup, sugar and pepper.

3.Allow to marinate for a few hours.

4.Cover pot bottom with oil and place chicken in when oil is hot

5.Cook for about an hour and a half. Every 20 minutes stir pot. Add a little water and cover it for the final 20 minutes.

Potato Salad With Raisins

   My family and I love potato salad and are always willing to try new recipes. This past Christmas we tried this one.

Ingredients

6 Irish Potatoes cubed

1 big onion, chopped

Salt to taste

Black pepper

1/2 cup of raisins

1/2 cup mayonnaisse

Directions

1.Add a teaspoon of salt in 6 cups of water and bring to a boil.

2.Boil potatoes for about 20 minutes.

3.Drain the water off.

4.Add the onion, black pepper, raisins and mayonnaise, then toss.

5.Spoon into a bowl and place in the refrigerator for about 2 hours.

Memory Table - Creative Monday Linky

    This holiday season I decided to have a special memory table for my late twin sister Janine and brother Sutcliffe. First of all I made sure that there were two photo frames that had pictures of them, then I decorated the table with some of our favourite decorations over the years. Janine and I loved red candles at Christmas so I lit 2 in memory of Janine and Sutcliffe. Here are some shots of the table.
