The Pimento Flavour - Creative Monday Blog Hop

       I must apologize for posting later than usual but I was so sick yesterday afternoon and part of last night that it is good to be feeling a bit better to post this hop today.
     Pimento is being reaped on our farm and some are already dry.  As soon as it is cleaned I look forward to adding it to some recipes. I love the flavour of pimento and use the dried unripe berries when cooking rice and peas, soup, escoveitched fish etc. 
       The pimento tree was said to be discovered in Jamaica in about 1509. Another name for pimento is allspice as its versatile flavour and smell remind one of pepper, ginger, cinnamon, cloves and nutmeg.  Allspice is a very important ingredient in the popular Jamaican jerk seasoning.  Have you ever used pimento when cooking?
