Bird Figurine Series - # 13

    

   This ring-necked pheasant figurine has not only been very special for Janine and me but our mom who received it from her late American pen-pal Dorothy Pratt. I will never forget that wonderful afternoon in 2006  when we met Dorothy, her daughter Jane and son-in-law Orrin at the famous Ruins restaurant in Ocho Rios. Mom and Dorothy were pen-pals for over 60 years. The ring-necked pheasant is the state bird of South Dakota where Dorothy lived.

Sausage & Macaroni - Creative Monday Linky

  When a hurricane hits and you do not have electricity you have to use tin foods. That is exactly what I did when we were without electricity for 12 days following Hurricane Sandy. Here is a recipe using a tin of sausages:

Ingredients
Macaroni
Tin of sausages
Hot Pepper Sauce
Tomato Ketchup

Method
1. Boil macaroni for about 20 minutes.
2. Drain and add hot pepper sauce or blackpepper.
3. Add about three tablespoons of tomato ketchup.
4. Cut up sausages in small pieces.
5. Fry in cooking oil until brown.
6. Add the sausages to macaroni and mix together.
7. Serve Hot.

Bird Figurine Series - # 12

   It is good to be back with my bird figurine series after a 2 week break due to Hurricane Sandy. Janine and I were thrilled when we received this beautiful bird figurine as a gift. I just love the variety of colours. I wish I knew the name of the bird. I continue to do my research and hope to some day.

Back After Hurricane Sandy! - Creative Monday Linky

   I have been missing in action since Wednesday, October 24, the day Hurricane Sandy made landfall in Jamaica.  My parish, St. Mary, was among the hardest hit areas.  I have experienced storms and hurricanes including some above category 1 but this one was terrible. In my area we had to endure almost 12 hours of strong winds and rain. It did damage to our home and  I got back electricity late yesterday, my birthday! A wonderful birthday gift! Sandy also resulted in loss of life and damage in other countries. My thoughts and prayers are with all those who were affected in Jamaica, the U.S.A., Cuba, Bahamas, Haiti etc.
  Well, I had a quiet yet enjoyable birthday with my family. Here are pictures of my birthday lunch.

Country Style Seasoned Rice
Ingredients
3 cups of water
1 packet of  Grace Chicken Noodle Soup Mix
1 large onion
3 stalks of escallion
Hot Pepper Sauce
2 sprigs of thyme
2 lbs of rice
1 tin of mixed vegetables

Method
1. Bring 3 cups of water to a boil.
2. Add Soup mix,onion, escallion, pepper sauce, thyme and rice and bring to a boil.
3. Reduce flame and simmer for 15-20 minutes or until rice is fluffy.
4. Use a fork and stir in mixed vegetables. 
5. Serve hot.

Bell or Sweet Peppers - Creative Monday Linky

     Do you ever use bell or sweet peppers? Recently I was happy to get the ones above and  I have been using them when cooking meat. I think they have a wonderful flavour. Over the years I have also used them in potato and vegetable salads as well as home-made pizza.  My favourite meat dish with this kind of pepper is Chinese Pepper steak. These peppers come in different colours. I found a lovely pin of them on Pinterest.

Bird Figurine Series - # 11

     This has certainly been a week of memories. Today in my bird figurine series I share pictures of the late Audrey Jean Campbell Haughton-James with a Kookaburra bird and the lovely figurine that her daughter Christine Taylor sent Janine and me some years ago.  I will always treasure the wonderful afternoon we had at my home when Jean and Christine spent some time with us. They journeyed all the way from Australia to meet the Haughton-Jameses in Jamaica. Jean passed away on September 28, 2012. May her soul rest in peace. My condolences to her family and friends.
