      Many years ago on one of  our trips to Kingston, Jamaica's capital, Janine and I could not resist this bird candy dish. It immediately became a part of our collection.  Strangely enough no candies have ever been put in it!

The Versatile Breadfruit - Creative Monday Linky

   Have you ever heard of the breadfruit?  It can be found in many tropical countries. It is an ovoid or round fruit with a thin green skin and is usually about 15 – 20 cm long and about 20 cm in diameter. Breadfruit can be cooked in a variety of ways - boiled, roasted, baked, fried etc. My family and I mainly have it roasted or fried. When it is mature it can be roasted for about 1 hour on the stove top.  Throughout this time it has to be turned several times so that all sides are cooked. It should be soft when cooked. A skewer or knife can be used to test it. The skin is usually peeled off. It is then cut in half, the centre removed and the rest cut in slices. It can be then eaten as is or fried.

Bird Figurine Series - # 8

  
   Glass figurines have always been among our favourites so Janine and I were thrilled when our mother told us that we could put this one with our collection.  It was a gift she received from a friend over 35 years ago.  Mom knew it would be safe with our birds.

Macaroni & Cheese - Creative Monday Linky

     I love macaroni and cheese and have tried preparing it in a variety of ways.  These days I use a box of macaroni and cheese then add some ingredients and  pop it in the oven.

Recipe
1 box of macaroni and cheese
4 tablespoons of margarine
1/4 cup of milk
Cheese sauce mix (sold with macaroni and cheese)
3 tablespoons of Tomato Ketchup
Hot Pepper Sauce
Black Pepper
1 chopped onion
Paprika

Method
1. Boil 6 cups of water
2. Add macaroni from box and stir.  Allow to cook for 7 to 8 minutes, then drain.
3. Add margarine, milk, cheese sauce mix, ketchup,  Hot Pepper Sauce, Black Pepper and the chopped onion to macaroni and mix well.
4. Butter a dish and pour mixture in. 
5. Sprinkle Paprika on top.
6. Bake for 45 minutes

Bird Figurine Series - # 7

  The dove is a symbol of peace.  Throughout life we face various challenges and we strive to find peace.  As  Eleanor Roosevelt once said "It isn't enough to talk about peace. One must believe in it. And it isn't enough to believe in it. One must work at it."

Cornbread - Creative Monday Linky

Recipe
1 cup of flour
2 teaspoons of baking powder
1 cup cornmeal
4 tablespoons of sugar
2 eggs, beaten
1 cup milk
1/4 cup softened butter

Method
Sift together the flour and baking powder, then add the cornmeal and sugar.  Stir in the beaten eggs, milk and butter, mixing well until the batter is smooth.  Pour into a greased tin or dish and bake in a moderately hot oven for 45 minutes or until golden brown.

     When you are a bird enthusiast you like some unusual figurines in your collection.  Janine and I were therefore very pleased to receive these gifts from our mom several years ago.
