ESCOVEITCHED FISH - CREATIVE MONDAY LINKY

 Escoveitched fish has always been a big favourite for my family and especially at Easter.  


RECIPE
2lb (1kg) fresh fish
juice of 2 limes
1/2 tsp salt
black pepper
cooking oil

Pickle
1-2 cho chos chopped in strips
3 carrots chopped in strips
2 onions sliced
1 or 2 hot peppers
2 tablespoons pimento seeds
1 cup vinegar
1 tsp sugar

Wash the fish thoroughly with water and lemon or lime juice, then dry with a kitchen cloth or towel.  Sprinkle them well with salt and black pepper.  Heat plenty of oil in a frying pan and place the fish in the hot oil. Fry them on both sides until they are brown.  Drain them and arrange them in a container.

To prepare the pickle combine the vinegar, sliced onions, pepper, pimento seeds,sugar, oil, water, chocho and carrot strips and bring to a boil in a pot.  When the ingredients are tender remove from the fire and let it cool.  Pour over the fish.

A BOOK FOR TOUGH TIMES


        As I was going through my regular browsing of a wide variety of blogs I came across a give-away that I just could not resist on About A Mom.  It was Chicken Soup For The Soul's  Devotional Stories for Tough Times.  I saw it at a time when I needed it so badly, shortly after the death of my brother Sutcliffe. Well, I went ahead and entered and you can just imagine how thrilled I was when I got an email stating that I was among the winners.
         I waited patiently and as it arrived I started reading. There are 101 Daily Devotions from different authors to inspire and support anyone facing challenges – grief, family issues, illness, financial difficulties,  you name it. I like the fact that each story begins with a Bible verse and ends with a prayer.
         I was especially impressed that the stories were not long and got the messages across very effectively. Many times when I felt low in spirit I read a story and immediately felt better. Even stories that did not relate to a challenge I faced had a powerful message as it encouraged me to trust in God and prayer even when I felt as if I was at the end of a rope.
         I highly recommend this book to anyone who is going through a very difficult period in his/her life. As a matter of fact it would be good to have this book even if all is well. It will come in handy if one day you find your back against the wall.
         I am rereading it, choosing now to read one story a day until the book is finished yet again.

     Here in Jamaica it is the custom for us to eat bun and cheese at Easter. Many bakeries bake them. This year we bought two of our favourites - HTB & National Easter Buns.

HAPPY EASTER!

  It is a long four day holiday weekend in Jamaica and holidays are not the easiest of times when you have lost loved ones.  However  as I reflect on Easter my spirit is lifted by two quotations - "Easter spells out beauty, the rare beauty of new life"  and "The great gift of Easter is HOPE." Interestingly these quotations were stickers on a letter from one of Janine's former pen-pals whose name is also Janine.

ROAST CHICKEN WITH STUFFING - CREATIVE MONDAY LINKY

ROAST CHICKEN WITH STUFFING



     Roast chicken has always been a big favourite for me and my family.  A variety of  ingredients  can be used in preparing it but this is how we do it at our home.

Ingredients

1 whole chicken
1 onion
Stalk of escallion
Scotch Bonnet pepper 
Garlic
Sprig of thyme
Salt to taste
Paprika
Cooking Oil
Chicken liver
Bread crumbs
Blackpepper

Method
Wash chicken with water and lime or lemon, then pat dry. Season chicken with salt, onion, escallion, garlic, thyme and pepper.  Place some oil in a frying pan, cut up chicken liver and cook it with seasoning and bread crumbs. You can spinkle a little salt and black pepper in the stuffing.  After that stuff chicken then sprinkle Paprika and oil over it. Place in an oven for about 1 ½ hours.
